Balsamic Glazed Watermelon Arugula Salad

Summer is finally upon us and we’re firing up the grill and going poolside for lots of fun in the sun! In my family I’m known for bringing the veggies to the barbeque. In fact, I’m typically the only one bringing the veggies so, I’m always looking for ways to have some fun with seasonal fruits and vegetables. One super easy and affordable way to do that is with a delicious and simple summer salad. 

In my last post we talked about How to Grow Sprouts at Home, today I’m incorporating those sprouts into a sweet and salty Balsamic Glazed Watermelon Arugula Salad. What I love most about this recipe is the contrast of flavors. Arugula has a pungent and slightly peppery/mustard flavor, but when paired with sweet juicy watermelon and topped with salty feta cheese you get a burst of delicious flavors that can only be described as a pool party in your mouth!

This salad is sure to be the perfect treat at your fourth of July barbeque. Pair it with a Chenin Blanc or Sauvignon Blanc for a nice picnic feel! Dee-licious!

Balsamic Glazed Watermelon Arugula Salad

For the salad

  • 1 cup baby arugula
  • 1 cup cubed watermelon
  • 1/2 cup sprouts
  • 1/2 cup feta cheese

For the dressing

  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar glaze

Preparation

Rinse and dry all produce

Remove rind from watermelon and cut into small cubes.

In a large bowl, combine arugula, feta cheese, zesty sprout mix, and watermelon.

Drizzle with olive oil and toss until all ingredients are lightly coated.

Serve chilled and top with balsamic glaze drizzle.
